The Wall Street Journal featured Helliemae's in this year's Valentine's Gift Guide. Pretty fun to wake up and open that particular paper.

 

Helliemae's had its debutante coming-out at the International Fancy Food Show in San Francisco Jan 15-17. And the Cardamom Caramels got some nice love from the official fancy food show writeup!

 

Westword named Helliemae's Salt Caramels one of their 10 favorite CO food and drink producers! I'm surprised and thrilled. Find the caramels at spots including The Perfect Petal, The Truffle, and Bella Vita (Evergreen).

Created by Elena McIntosh & Chuck Smith Helliemae's Handcrafted Caramels are different. Pushed to the very brink of what sugar + heat can do, these big, deeply-flavored beauties are much more intense than other caramels. Dark and rich, they're made in tiny, four-pound batches with more butter and cream than most: they taste incredibly fresh, not sticky.

 

Year round, I sell three main varieties: Classic Salt, Coffee, and Cardamom. They all have Helliemae's signature addictive intensity. Each season, I introduce limited-edition flavors.

  • Valentine's (Jan 20 - Feb 29): Chili Palmer - cinnamon + chili + salt = POW.
  • Easter (March 15 - April 30): Peanut Butter - now listen here, the trifecta of salt, caramel, and peanut butter is pretty much alchemical.
  • Mother's Day (May 1 - May 30): Jasmine Tea - lighter caramels that bloom with jasmine tea on the finish. The tea is floral, but also earthy and grounded.
  • Father's Day (June 1 - June 30): Well, I haven't decided yet. Mr. Helliemae suggests Bananas Foster, but I'm leaning toward some sort of whiskey or beer. If you've got any ideas, shoot 'em to me.
  • Autumn (Sept 15 - Oct 31): Apple - caramel-covered apples, but without the mess
  • Holiday (Nov 15 - Dec 31): Candy Cane - the very essence of the holidays: peppermint, spices, caramel - I can almost see Hansel and Gretel eating them on Christmas morning.
